Now that sushi restaurants populate every street and people are no longer hesitant to try dishes more daring than the California Roll, restaurants and chefs need an edge to draw in patrons. Mark Hayashi, Executive Sushi Chef at Koi, in West Hollywood, definitely knows how to bring in guests.
